Madame Barthelemy’s fromagerie is loved by all the kings horses and all the kings men, even the last president and his prime minister. Her shop is cozy, a narrow slice of aged comte. She is always behind the bar by the brie de meaux with a story and a souri.

SALON DU FROMAGE HASIDA
Hasida is a gold medal winning Japanese fromagerie hiding in the first arrondissement like a secret snow flower. Behind her closed petals she offers truffle cheese, sake washed rinds, wasabi chevre and traditional trade from every region. With a twenty one cheese tasting the third Saturday every month for thirty euros in a quaint corner it is a lovely perch to chirp about regional specialties over champagne, and Japanese wine.

ALLEOSSE
Like any good secret, Alleosse is a formal fromagerie in the 17eme on a market street. Hiding beneath the sterile counters and 500 flavors is its own cellar, rare real estate for any cheese shop in Paris. The kraft master works with raw milk making his own delightful fare not found anywhere else. He makes his storefront selections from specific pedigreed farms conducting integral, old fashioned, reliable relationships farm or cellar to table.
